Lauri's Roasted Purple Cabbage Steaks

Preheat oven to 425

Slice cabbage into 1/2” steaks, cut in half, top with raw pureed/diced or roasted garlic, top with chopped fresh dill (or other favorite or available herb) sliced scallions, drizzle with olive or avocado oil, apple cider vinegar (ACV), salt and pepper, and roast 10-20 minutes to taste (lauri lang original recipe)

 

Lauri's Seared Trout fillets

Crust fillets with your favorite or available ingredients. A therapeutic and delicious combo I use: ground flax, sesame seeds, turmeric, lemon zest, your favorite salt, pepper (to activate turmeric). Heat avocado or other oil suitable for high temperature searing in skillet, add diced or pureed garlic, sear skin side down 3-4 minutes, turn and add capers (optional) lemon/lime/a few drops ACV. Sear another 3-4 minutes. Total cooking time, depending on size of trout halves 7-9 minutes.

Lauri’s Cauliflower Turmeric Flatbread

2 cups riced cauliflower (can use broccoli, cabbage, get creative!)

4 eggs

1 cup mixture almond flour and ground flaxseed

3 tsp ground turmeric

½ tsp Himalayan or sea salt, or to taste

black pepper to taste, to activate turmeric

chopped fresh herbs of choice (cilantro, dill, basil, chives, basil, tarragon, etc….)

optional: chopped olives, scallions, onions, capers

Instructions:

Preheat oven to 350-375 degrees, depending on oven

Combine mixture thoroughly

Line a baking sheet with parchment paper and spread evenly about 1 centimeter thick

Bake for 25-30 minutes, or until cooked through and browning at the edges

Allow to cool, cut and store in refrigerator for up to a week, freezes well

Lauri’s Chia Pudding

Base for single hearty serving, can be multiplied

½ cup light organic canned coconut milk (use full fat if weight gain is a goal)

2+ TBSP chia seeds (you will need to experiment, not 3 when increasing servings)

¼ tsp+ vanilla extract

cinnamon to taste

scant 1/2 tsp pure maple syrup or honey, optional

dash sea or Himalayan salt

1 TBSP cacao powder, or to taste, optional

Whisk together, refrigerate until sets (2 hours or longer)

Topping

Mixture of chopped berries, and other fruit

(raspberries/blackberries/blueberries/pomegranate seeds/mandarins, can use cherries/peaches, dried fruit, your favorites, what you have on hand)

Nuts/seeds (spicy sweet pecans, pumpkin seeds, others…)

Cacao nibs

Shredded unsweetened coconut
